Heat 1 tbsp oil over medium-high heat in a large non-stick skillet or wok. Add in shrimp, cook until the shrimp is pink and cooked through. Remove the shrimp from the pan and set aside.
Add a little more oil to the pan and add in broccoli. Stir fry for about 3 minutes then turn the heat down to medium and add carrots, red bell peppers and garlic. Add in Raspberry Chipotle Ketchup and cooked chow mein noodles. Stir to coat. Stir in chopped cilantro and add salt and pepper to taste.
