Spicy Veggie Burger

  • 1 can chickpeas, drained, well-rinsed and mashed
  • 1/2 red onion, finely chopped
  • 1 small zucchini, grated
  • 3 tbsp finely chopped cilantro
  • 5 tbsp Raspberry Chipotle Ketchup
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 2 tsp black pepper
  • 1/2 tsp sea salt
  • 1 cup quick oats
  • 2 tbsp olive oil

Drain and rinse chickpeas. Place in a bowl and mash with a fork. Add all other ingredients to the bowl and mix thoroughly with your hands. Form into 6-8 patties. 

Cook on grill for approximately 10 minutes per side. You can also fry these in a pan for 3-5 minutes per side.
