Peach Salsa Huevos Rancheros

  • 2 tortillas
  • 1 cup Pulled Pork
  • 1/2 cup Black Beans
  • 2/3 cup Blackberry Patch Peach Salsa
  • ¼ cup Grated mexican cheese
  • 2 poached eggs
  • Olive Oil for brushing tortilla

Butter 2, 4 or 5 inch ramekins. Put tortilla in ramekin, pleating as needed on one side. Layer pork, black beans, salsa and mexican cheese. Brush tortilla with olive oil. Bake at 350 for 15 minutes. Add poached eggs on top once you pull from oven. Serve with more Blackberry Patch Peach Salsa on the side.
