Strawberry Fig, Bacon and Spinach Galettes

  • 1 store bought pie crust, 9 inch
  • 3 pieces of bacon, cooked and chopped
  • 3 ounces of goat cheese
  • ½ cup fresh, chopped spinach (not frozen)
  • 6 tablespoons of Blackberry Patch Strawberry Fig Preserves
  • 3 strawberries, sliced

Preheat oven to 350 degrees. Cut out 6, 4 inch circles, place on a baking sheet that is covered with parchment paper. Layer Goat cheese, spinach, bacon, and sliced strawberries in the center of each dough circle. Fold the edges up over the filling, leaving the middle open. Pleat the edges as needed. Bake at 350 degrees for about 20 minutes or until the crust is lightly browned. Top with Blackberry Patch Strawberry Fig Preserves and serve.
